49ers Super Bowl Chili - Beef Bad for You?

Looking for a recipe for a chili for the 49ers Super Bowl?

Here is a great option...

...this one I made on the day the won the NFC Championship over the Falcons

Bison(I used Grass Fed Beef) & Butternut Cocoa Chili

Mix this first group of ingredients
3 Cloves Garlic, smashed
1tbs smoked paprika
2 tbs chili powder
1 tbs chipotle powder
1 tbs cinnamon
1 tbs 100% cocoa powder
1.5 tbs sea salt
2 tsp black pepper
32 oz diced tomatoes, or 4 cups fresh, diced

Place these ingredients in slow cooker and cover with the mixture from above
1 lb grass fed beef stew meat (or bison)
2 cups butternut squash, peeled and diced into 2in chunks
1 onion, diced into 2in pieces
1 bell pepper, diced into 2in pieces

Cook on low for 4-6 hours

Think beef is unhealthy for you?  Do you stay away from red meat because "it's gonna clog your arteries and cause a heart attack"?  

The same people that brag about never eating red meat are oftentimes the ones that have no problem eating dessert every day...even though sugar has been shown to be way more detrimental to health than eating beef several times per week.

Well, this may be a big surprise and shock for you...but you need to hear it if you haven't already.

Red Meat is NOT bad for you and it's NOT going to cause a heart attack.  This is outdated nonsense propagated by the uninformed medical and nutrition community who are clueless when it comes to what actually creates health. 

If you're worried because of the latest news reports touting some should dig a little deeper.  Most studies are done under unnatural conditions using poor quality meats and equally unhealthy people.  Do you really think that the way some food affects your neighbor is how it is going to affect you...hardly...each person responds differently to what they eat.  Not that you should never believe studies...but be careful about broad generalizations coming from them.

The key when eating beef is what the animals ate, most mass farmed cattle eat grain, which they are not designed to eat.  Thus the unfavorable omega 6:3 fat ratios of about 20:1.  However, grass fed beef has an omega 6:3 ratio that is around 3:1 and a much lower amount of fats that have been linked to health issues (though this linkage is weak).   Read this to find out about the health benefits of beef and why it's not the villain.

So the solution is buy grass fed beef...yes it costs more and you're not likely to find it at Safeway...but it tastes better, it's healthy and you'll feel better after eating grass fed beef.
