Healthy Breakfast Recipe - Pleasanton Residents Tired of Boring Diet?

If you're like me, and most other people, you probably eat the same small selection of foods over and over again.  It's easy, convenient and we're creatures of habit.

However, in an effort to add more variety to my eating, this year I decided to try at least one new recipe per week.  Being very busy, I do the majority of this cooking on the weekends, but I have managed to try a few during the week.

So far I've tried something like 8 different recipes which I'll be sharing on the blog.  These recipes are all out of the Practical Paleo book by Diane Sanfilippo, which is a combination nutrition and cookbook which is very informative and easy to follow.  This is one you'll want to actually get the book...not the kindle edition.

Today I thought I'd share a pancake recipe I've made (neither contain gluten) twice that is quite good.

This one is for Pumpkin Pancakes...these are really good!




Here it is...

4 eggs
1/2 cup canned pumpkin
1 tsp pure vanilla extract
2 tbs pure maple syrup (I used agave nectar instead)

Whisk the above 4 ingredients together and sift in the following dry ingredients...

1 tsp pumpkin pie spice
1 tsp cinnamon
1/4 tsp baking soda

Melt butter/coconut oil in a skillet and mix into batter.

2 tbs butter/coconut oil

Spoon into skillet.  Don't make these pancakes real big or you will have a hard time flipping them.  I'd say 4-6 inches is plenty wide.

Serve with butter and cinnamon/sliced bananas

Enjoy these healthy pancakes and buy the Practical Paleo book, not only does it have great recipes but it has great information on nutrition and health.

Note: I used all organic ingredients and raw grass fed butter.  Obviously you don't have to use all organic, but the quality and nutrition will be better if you do.  If you think organic and non-organic are equally as healthy then I have some beach front property in Alaska for you.  I know there was a study discussed last year in the media that said they aren't any better, but before you believe it you might want to check into who funded that study ;)
